Can you try using Catch Import Export Plugin to export the customizer setting.

Then you update the theme. After you update the theme you import the customizer settings you had exported earlier.

To update the PHP version you will to contact your web server.

@minormoves: You can use our Catch Gallery Plugin to create a Gallery.

Create a Post/Page for Gallery
Add New Block => Formatting => Classic Block => Add Media => Create Gallery => Select the images you want in your Gallery => Create New Gallery => Now Select the type and size of the Gallery images you want in the Gallery Settings and Click Insert Gallery.

Now,
Go to => Appearance => Customize => Theme Options => Gallery => Select Type as Post/page and Select that Post/Page where you have created the Gallery.
