@lorenzorinnova: To display next and previous relating to a specific category only you will need to create a child theme and get your site customized. Let me know if you are comfortable with child theme customization.

@lorenzorinnova: If you do not have knowledge of Child theme customization I recommend you to seek Professional help because a single mistake may result your site to be down. Alternatively you may hire a customizer to get your site customized.

@lorenzorinnova: To change the background image. Login to your WordPress admin.
Go to Appearance => Customize => Essential Content Types Plugin Options =>Services
Under Service Archive Featured Image : Select the desired image and save.
If you would like to hide the archive labels you may download and install the following plugin.

@lorenzorinnova : You can enable the header media but a different image cannot be uploaded in the project type. Let me know if you have any more issues and it seems like the services archive image is working on your site.
