1) Its difficult to provide all the possible color options in the customizer itself. You can already see there are a lot of color options. That is why we use Additional CSS. I hope you understand.

2) I think if you want to have a smaller size image you can insert a smaller image. Please post in your site URL if any issue arises.

Go to => Appearance => Customize => Theme Options => Footer Editor Options => Insert your text and separate the text you want to overflow to next line by a <br> tag.
