Go to => Appearance => Customize => Theme Options => Homepage / Frontpage Option => Posts Page Header Text => Edit the text and Publish.

To hide the single post title and date
Go to => Appearance => Customize => Additional CSS and add the following CSS Code.

    display: none;
}

You will need to make all the changes you made to the parent theme to the child theme because the changes you have made to the parent theme will be lost when update the theme.

The child theme doesn’t retain your customizer settings. You will need to use Catch Import Export. You will need to import your customizer settings from parent theme to the child theme.

This is the first step after you create a child theme. After this you can customize the site to the way you want.

The child theme doesn’t affect your parent theme. After you activate the parent you will get you site back to how it was looking.

Reinstalling the theme shouldn’t override your entire site but you can back up your customizer settings to be on the safe side. As I cannot see the issue at my end it is very difficult for me to debug the issue.

What you can do is you can upload your site to a domain then put it on under construction mode using our plugin Catch Under Construction. Then I can look into your site and try debugging the issue.

This maybe because you have used different image size for the third image 1200*800 in your slider. Can you try using a uniform image size for the images in your slider?
