I have two issues with the header feature slider: (1) wouldn’t display my uploads, that is, my uploaded pics show in customization area but none of my images display -the ‘demo’ images continue to display and (2) even the demo pics stopped ceased cycling after I installed wordpress jetpack/slideshow gallery on homepage.

Issue 1 Troubleshooting: tried all the options – the only images that will show are those Demo images included with the package
Issue 2 Troubleshooting: I deactivated jetpack and the original header slideshow worked again. Is there a way to include a slider on the page and not break the header?

@redlillies: Seems the Jetpack’s slideshow is causing the issue. Please contact Jetpack support for this issue.
And for displaying slider image apart from demo sliders, Go to Dashboard=> Appearance=> Customize=> Featured Slider=> Slider Options and select Featured Page Slider and select the pages you want to display as slider.
Note: Please make sure that all the page selected for Featured Page Slider has Featured Image.

Are you using any other plugins, try disabling theme one by one and check if it resolves the issue. Let me know if the problem persists. Please post in your site URL.
