@roche5000: All Posts are automatically added to at least one category and if you don’t assign it then it will be automatically assign to default category. Only page can be independent of category.

But if you just want to hide that display, then you can add the following css in “Appearance => Theme Options => Custom CSS” box:
#main #content .tags { display: none; }
