You shouldn’t have any problems wiping out the homepage content that was made using Gutenberg. Even the Select Options button issue looks to be an issue with Gutenberg Blocks.

Header Video not showing up on mobile phones or screen size less than 900px is a default WordPress feature. To show header video even on mobile phone you will need to use our Header Enhancement Plugin.

The image behind the welcome to the store is set from your Homepage
Go to => Dashboard => Pages => Edit the page Homepage => Edit the image and Update the page.

You will need to use Gutenberg editor to fix all the issue that you have mentioned above.
