I’ve added a video to the site according to the required dimensions.
The video loads on desktop browsers, but not mobile browsers – tested on latest version of Safari & Firefox on latest iOS.
The video will load and play in these browsers via a direct link to the file in WordPress. So there’s definitely a problem with the theme rendering.

Hoping to go live with the site on Monday next week. So a speedy response to this would be much appreciated!!

@webmonster : The header video feature is disabled by WordPress core and it’s not a theme related issue. If you would like to enable header video on mobile devices as well you will need to install and activate Header Enhancement plugin by Catch Plugins. You may check out the Pro version as well which contains a lot more features than the free version.
Let me know if you need any further assistance regarding the issue.

Thanks for the speedy response tikaram, that solved the problem.
What would have been even better though – that the actual theme a) either supported this as standard (it’s a free plugin, why not just build it in), or, b) the theme had some advisory text saying that an additional plugin is needed for mobiles.
Either of these would have saved frustration and time for both me and you – not to mention other people struggling with this issue!!!
