Go to => Dashboard => Settings => Privacy => Change your Privacy Policy page => Select the page you want to have as the privacy policy link and the Click on Use this page.

To show date on pages you will need to create a child theme and do a little bit of customization. Let me know if you are familiar to child theme customization so that I can help you out.

You seem to be using Header Image feature for the logo.
Instead of using that please
Go to => Appearance => Customize => Site Identity => Logo => Upload the Logo and Publish.
Now, the Logo should appear above the site title.

The Menu Color options only works for the Primary Menu. Please let me know what color changes you would like to make for the Secondary Menu so that I can provide you the necessary CSS Code.

The recommended size for Header Image is 1920*1080px. Can you try using that size and see if the image appears better?

For that
Go to => Appearance => Customize => Header Media => Enable On => Select Entire Site, Page/Post Featured Image and Publish.

Now the featured image you setup on each post/page will show up as the header image on that page.
