    noticed that there is meta info in the html code, but it is hidden beneath other elements.

    Really, I want to remove and replace the author and date with post name, and don’t need the excerpt to display, and instead would like the category and tags to display under the thumbnail – but they need to be limited to available space / cut off at a certain character amount, as some of my posts might have 50 tags…

    is this possible?

    It looks like some of that info is being pulled by the theme, and is present in the code that is sent to the browser, it’s just hidden in someway to not be display. I attach image showing this.

    @djsteve: For this you will need to create a child theme and make lots of customizations. I suggest you to hire a customizer.
