@bastienchill: Can you please let me know the translation plugin that you have used on your site. Please post in your site URL as well so that I can help you change the font size of titles.

I do not use any translation plugin on my website (https://bastienchilloux.com)

I can elect categories (which I name the way I want) but the “all” category seem to be a preset where everything is showed but I need to change “all” by another word.

@bastienchill: If you do not use translation plugin you will need to create a child theme and make the customization. Let me know if you are comfortable with child theme customization.
