Can the menu be fixed when I scroll ?
Can I put a grid of pictures from Instagram down to the page ?
Can I add a sidebar ? If yes do you have example to show how it can be ? Can I have the sidebar at the beginning of the home page and then, at the end, be full-width without the sidebar ?
Can I add the social widget up to the page near to the menu ?
Can I change the color of the menu and frame ?
Can I post videos ? Can I add a gallery ? What plug-in are compatibles with this theme ?
Is the dummy content included ?

Site you have shown in a full width layout site. Helena is a boxed layout site. Check out demo at https://catchthemes.com/demo/helena/.

This is not possible in this theme.

There is a Instagram Widget which can help you achieve what you want, but only in pro version.

Its not possible in this theme. Try Parallax Frame Pro or other theme.

Yes this is possible.

We do not have dummy content. If you really require it, you can use Theme Unit Text or WP Test.
