I want to use the Co-Author Plus plugin, but can’t find the the_author_posts_link() which I should change to coauthors_posts_links() in any of the templates.

Could you please advise?

@Michaela: Catch Everest theme doesn’t use the_author_posts_link(), instead it uses get_author_posts_url(). If you want to edit that then you need to build child theme and then copy catchkathmandu_header_meta() and catchkathmandu_post_format_meta() functions from template-tags.php to your child theme functions.php file.
