When is it the right time to update the current installation?

Hello guys, Since some days is available the last release of WP 4.7. I'm working with WP 4.6.1, Chatch Evolution Pro 3.4 and some plugins too. I have verified the update-status of these plugins and i could see that only a part of them are compatible with the 4.7 of WP. Please, someone can tell me what i have to do at the best? Have I to wait until all plugins are available for the last version of WP or not? I'm a beginner in WP and I wouldn't create unnecessaries troubles myself...
