Slider problems&number of posts displayed

Hi, I have some problems with the slider pictures. I tried to change them several times by updating the Posts but the only thing I was able to change was the order. My second issue is how I can display more than 3 recent posts? 3rd: I set all categories visible excluding the uncategorized one which is unfortunately absolutely visible on home page.
