Select a post category for a blog page

Hello! I have been reading through the theme instructions and support forums and can't seem to figure out how to direct certain post categories to certain pages on my website. I have two categories selected for the home page, but I want different categories to show up on other pages. The changes I'm making in customization seem to affect all pages. How can I select a post category, or categories, for an individual page that is not the home page? Thanks so much for your help.
