is upgrading a must?

The past 2 months, my site became cluttered and had the editing page actually on the actual website. It was removed once I upgraded the Simple Catch theme. Is there anyway I don't have to do this? After each upgrade, the website is alot of different. Is there anyway I can keep a version and not ever have to upgrade?
