Custom number of words in preview

Hi there, Is there a way to set the number of words in the preview on a per-post basis? I thought I could just set it really high, and then use Wordpress' built-in <!--more--> tag, but then the "Read more"-link disappears. Is there a theme-specific tag I could perhaps use?
